BAKED EGGS WITH MOZZARELLA

Yes! BAKED eggs! They are excellent!

KITCHEN TOOLS NEEDED

Medium-large non-stick pan
Small non-stick baking pan (I used a bread pan used for making things like banana bread)
Non-stick cooking spray
Cheese grater
Large mixing bowl

INGREDIENTS

Eggs 3
50 grams grated Mozzarella, or more depending on preference
1tbsp olive oil
1 small onion, chopped
6 cloves of garlic, chopped
Salt to taste
Black pepper, to taste
4 tbsp tomato puree
Pinch of red chili powder
3-4 Basil leaves, plus more for garnishing
1 green bell pepper, chopped
2 tomatoes, thinly sliced
2 tbsp cream

DIRECTIONS

  1. Preheat oven to 180ºC.
  2. Heat olive oil in a non-stick pan. Add the onion and sauté.
  3. Add the tomatoes and sauté.
  4. Add garlic, salt, pepper, 2-3tbsp water and tomato puree and mix well.
  5. Add red chilli powder and mix well. Add 3-4 basil leaves.
  6. Add green pepper. Mix and cook for 2 minutes. Transfer the mixture into an ovenproof pan spray with non-stick cooking spray.
  7. Put grated mozzarella in mixing bowl. Add cream and mix well.
  8. Put some of the mozzarella & cream mixture into the ovenproof pan. Break the eggs on top, keeping a little distance between each. Put remaining mozzarella & cream mixture over them.
  9. Sprinkle salt and pepper on top and bake in preheated oven for 15 minutes or till the eggs are cooked.
  10. Serve hot garnished with basil leaves.
