INGREDIENTS
1 12oz CAN OF CORNED BEEF
1 MEDIUM ONION, DICED
1/2 BULB OF GARLIC, MINCED
1 GREEN PEPPER, DICED
1/2 CUP CORN
1-2 TBSP WORCESTERSHIRE SAUCE
1 TBSP DRIED THYME
1 MEDIUM TOMATO, DICED
1-2 TBSP KETCHUP
1 TBSP MUSTARD
2 TBSP OLIVE OIL
SALT & PEPPER TO TASTE

DIRECTIONS

  1. HEAT OIL IN A LARGE SKILLET ON MEDIUM HEAT. ADD ONION AND COOK UNTIL SOFTENED, ABOUT 2 MINUTES. ADD GARLIC AND GREEN PEPPER AND COOK FOR ANOTHER 2 MINUTES.
  2. ADD CORNED BEEF AND MASH WITH A FORK OR POTATO MASHER. COOK FOR ABOUT 4 MINUTES. ADD TOMATO AND CORN. COOK FOR ANOTHER 2 MINUTES. ADD THYME, MUSTARD AND WORCESTERSHIRE SAUCE. STIR AND COOK FOR 1 MINUTE. ADD KETCHUP, SALT AND PEPPER. MIX AND COOK ANOTHER 2-3 MINUTES. SERVE AS IS OR WITH RICE.
