CAULIFLOWER WITH TOMATOES
KITCHEN TOOLS NEEDED
Large mixing bowl
9” x 13” baking pan (about 2” deep)
Aluminum foil
INGREDIENTS
7 cups small cauliflower florets (from 1 large head of cauliflower)
3 Plum/Roma tomatoes, chopped
¼ cup Olive oil
2 Cloves of garlic, finely chopped
1 ½ Tsp Cumin seeds
¼ Tsp Turmeric
Pinch of cayenne
½ Tsp Chili powder
½ Tsp Pepper
Salt to taste
Fresh Lemon juice from one lemon
1-2 Tbsp Cilantro, chopped
DIRECTIONS
- Preheat oven to 450 F.
- Toss cauliflower florets in mixing bowl with plum tomatoes, olive oil, garlic, cumin seeds, turmeric, cayenne, chili powder, salt and pepper.
- Empty into shallow baking pan and bake for about 25 minutes.
- Remove from oven and pour into mixing bowl. Add lemon juice and cilantro. Toss and serve.
