CAULIFLOWER WITH TOMATOES

KITCHEN TOOLS NEEDED

Large mixing bowl
9” x 13” baking pan (about 2” deep)
Aluminum foil

INGREDIENTS

7 cups small cauliflower florets (from 1 large head of cauliflower)
3 Plum/Roma tomatoes, chopped
¼ cup Olive oil
2 Cloves of garlic, finely chopped
1 ½ Tsp Cumin seeds
¼ Tsp Turmeric
Pinch of cayenne
½ Tsp Chili powder
½ Tsp Pepper
Salt to taste
Fresh Lemon juice from one lemon
1-2 Tbsp Cilantro, chopped

DIRECTIONS

  1. Preheat oven to 450 F.
  2. Toss cauliflower florets in mixing bowl with plum tomatoes, olive oil, garlic, cumin seeds, turmeric, cayenne, chili powder, salt and pepper.
  3. Empty into shallow baking pan and bake for about 25 minutes.
  4. Remove from oven and pour into mixing bowl. Add lemon juice and cilantro. Toss and serve.
