CHEESY MASHED AVOCADO ON EGGPLANT

Since a good avocado is easily mashable right out of the skin, all you have to do is mash it. This is a basic recipe that you can add to, based on your own personal toppings.

KITCHEN TOOLS NEEDED

9” x 13” baking sheet/pan
Aluminum foil
Large mixing bowl
Cheese grater

INGREDIENTS


3 ripe avocados, deseeded and removed from skin.
1 Eggplant, sliced into 4 “pucks”, about ½ inch thick.
½ cup grated cheddar cheese (or more as per your preference).
½ cup goat cheese, crumbled (or more as per your preference).
1tsp garlic powder.
½ tsp. pepper.

DIRECTIONS

  1. Preheat oven to 375 C.
  2. Put avocado in large mixing bowl and mash well with potato masher or fork. Add grated cheddar and garlic powder and mix well.
  3. Line a 9×13 inch backing sheet with aluminum foil and spray with non-stick cooking spray. Place eggplant pucks on sheet and spoon desired amount of avocado mixture on top of each puck. Top with desired amount of goat cheese and pepper.
  4. Bake for 15 minutes and serve.
