CHEESY MASHED AVOCADO ON EGGPLANT
Since a good avocado is easily mashable right out of the skin, all you have to do is mash it. This is a basic recipe that you can add to, based on your own personal toppings.
KITCHEN TOOLS NEEDED
9” x 13” baking sheet/pan
Aluminum foil
Large mixing bowl
Cheese grater
INGREDIENTS
3 ripe avocados, deseeded and removed from skin.
1 Eggplant, sliced into 4 “pucks”, about ½ inch thick.
½ cup grated cheddar cheese (or more as per your preference).
½ cup goat cheese, crumbled (or more as per your preference).
1tsp garlic powder.
½ tsp. pepper.
DIRECTIONS
- Preheat oven to 375 C.
- Put avocado in large mixing bowl and mash well with potato masher or fork. Add grated cheddar and garlic powder and mix well.
- Line a 9×13 inch backing sheet with aluminum foil and spray with non-stick cooking spray. Place eggplant pucks on sheet and spoon desired amount of avocado mixture on top of each puck. Top with desired amount of goat cheese and pepper.
- Bake for 15 minutes and serve.
