CHEESY MASHED POTATOES WITH BASIL AND CILANTRO
The classic side dish. Make them simple or add your own flare. Here we have my own flare! NOTE: If you cannot find Cilantro, look for Coriander. They are the same thing.
KITCHEN TOOLS NEEDED
Large pot with slotted lid (The little hole in the lid allows steam to escape without everything oozing out during cooking)
Large mixing bowl
Strainer
Cheese grater
Potato masher or electric hand blender
INGREDIENTS
THIS RECIPE IS FOR A SMALL SERVING FOR 1-2 PEOPLE.
3 Yukon Gold potatoes cut into 1 inch-ish cubes. (You can remove skin beforehand if you want. I like mine with the skin on)
1 Tbsp. butter, melted.
½ cup of heavy cream (or regular milk) warmed up for about 20 seconds in a microwave
¼ cup fresh chopped Basil
¼ cup fresh chopped Cilantro
1 Tbsp. grated Parmesan
1 cup grated Cheddar Cheese
DIRECTIONS
- Bring a large pot of water to a boil on high heat. Add potatoes, cover with slotted lid and cook for 15 minutes. Do not reduce the heat.
- Strainer and remove water then put potatoes into a large mixing bowl. Let sit for about 3 minutes to dry a bit.
- Started mashing potatoes just a little bit and then add melted butter and warmed cream/milk. Mash potatoes more until combined. Add basil, cilantro, Parmesan and grated cheddar. Mash more until combined and desired fluffiness. Top with more grated cheddar (optional) and serve!
