CHEESY ROASTED TOMATO AND BLACK OLIVE SOUP
An amazing hearty soup that is easy to make and the aforementioned AMAZING!
KITCHEN TOOLS NEEDED
Shallow roasting pan/baking sheet
Aluminum foil
Cheese grater
Electric hand mixer/food processor
Large mixing bowl
INGREDIENTS
THIS RECIPE IS FOR A SINGLE SERVING. INCREASE INGREDIENTS AS NEEDED.
3 Plum/Roma tomatoes
½ cup of pitted black olives, sliced in half
1 Tbsp fresh chopped Basil
1 Tbsp fresh chopped Basil
1 Tbsp grated Parmesan
1 Tbsp grated cheddar
DIRECTIONS
- Roast the tomatoes as per Chef Nairby’s ROASTED TOMATOES recipe.
- Place hot roasted tomatoes in mixing bowl (or food processor) and mix with a hand mixer until you get a thick sauce texture.
- Add black olives, basil, cilantro, Parmesan and cheddar. Mix more until desired thickness. Top with chopped basil and cilantro mix and some grated cheddar (all optional) and serve!
