GREEK YOGURT SCRAMBLED EGGS

Yogurt in eggs? YES! These are like no scrambled eggs I’ve ever tasted or made before!

KITCHEN TOOLS NEEDED

Non-stick frying pan
Large mixing bowl
Cheese grater
Hand whisker/egg beater

INGREDIENTS

6 eggs
2 Tbsp plain Greek yogurt
1 cup fresh spinach leaves
½ cup grated mozzarella and 1 Tbsp grated mozzarella, set aside
Salt to taste
Pinch of pepper
Pinch of garlic powder
Pinch of onion powder

DIRECTIONS

  1. Beat the eggs in a large mixing bowl with a whisk or electric hand mixer. Add Greek yogurt and mix again. Add salt, pepper, onion powder and garlic powder. Mix.
  2. Cook on medium heat in a non-stick pan. When curds start to form in the pan (when it starts looking cooked “eggy”), add spinach leaves and ½ cup of mozzarella. Continue stirring and cooking until done.
  3. Remove eggs from pan. Garnish with 1 tsp. grated mozzarella and serve.
  4. You can, of course, use fresh chopped onion and garlic if you feel like going all out.
