HOMEMADE TOMATO SAUCE

INGREDIENTS
2 TBSP OILIVE OIL
5-7lbs OF TOMATOES, CHOPPED OR ROASTED OR BOTH
2 MEDIUM ONIONS, CHOPPED
1 WHOLE BULB OF GARLIC, CHOPPED
1 ROASTED RED PEPPER, CHOPPED
1 ROASTED YELLOW PEPPER, CHOPPED
1-2 CUPS OF MUSHROOMS, SLICED
1lb GROUND BEEF
2 SMALL CANS OF TOMATO PASTE
1-2 BAY LEAVES
HANDFUL OF FRESH BASIL
1 TBSP DRIED OREGANO
1-2 PINCHES OF RED PEPPER FLAKES
1/2 CUP RED WINE
SALT AND PEPPER TO TASTE

DIRECTIONS

  1. HEAT OIL IN A LARGE POT ON MEDIUM HEAT. ADD ONIONS AND GARLIC AND COOK FOR 2 MINUTES. ADD MUSHROOMS AND COOK FOR ANOTHER 2-3 MINUTES. ADD ROASTED PEPPERS AND COOK FOR 1-2 MINUTES.
  2. ADD TOMATOES AND MIX WELL. COOK FOR ABOUT 10 MINUTES, STIRRING OCCASIONALLY. MEANWHILE, COOK THE GROUND BEEF AND SET ASIDE.
  3. LOWER HEAT TO LOW-MEDIUM. ADD TOMATO PASTE, RED PEPPER FLAKES, BAY LEAVES, OREGANO, RED WINE AND BASIL. MIX WELL AND ADD GOUND BEEF. CONTINUE COOKING AND STIRRING AND WITH A WOODEN SPOON, CRUSH THE TOMATOES AS THEY SOFTEN TO RELEASE THE FLESH AND SEPARATE THE FLESH FROM THE SKINS. CONTINUE STIRRING AND CRUSHING FOR A FEW MINUTES. LET SIMMER FOR 20 MINUTES, OR MORE IF YOU WISH. CONTINUE STIRRING OCCASIONALLY TO AVOID STICKING. ADD SALT AND PEPPER TO TASTE. SERVE OVER COOKED PASTA AND EAT AS IS!
