DON’T throw out those leftover mashed potatoes! Try this and those potatoes will taste and feel like they were just made!

INGREDIENTS
Leftover mashed potatoes
Bread slices, buttered

Homemade Beef Gravy
INGREDIENTS

-1/4 cup (1/2 stick) butter
-1/3 cup all-purpose flour
-2 1/2 cups beef broth
-1/4 teaspoon salt
-1/4 teaspoon black pepper
-1 Tbsp fresh Thyme (Optional)
-Handfull of chopped spring onion

DIRECTIONS

  1. In a medium saucepan, melt butter over medium heat. Add flour and whisk until smooth. Slowly stir in the broth, salt, pepper and Thyme (If using); continue stirring until mixture comes to a boil and thickens.
  2. Heat a pan on medium heat. Place one slice of bread, buttered side down, in the pan and Add a mashed potato patty on top. Top with other buttered sliced bread, buttered side on the outside. Let fry 1 1/2 to 3 minutes, depending on how cooked you like it. Flip over and fry other side. Top with gravy and spring onion.
