INDIAN CHICKEN MASALA

-1 Chicken breast, cubed

Chicken Marination
-1/2 tsp chili powder
3/4 tsp Garam Masala
1/2 tsp Turmeric powder
1/2 tsp Minced Garlic
1/2 tsp Minced Ginger
1/4 tsp Salt
-2 tbsp plain yogurt

Other Ingredients
-2 tbsp olive oil
-1 bay leaf
-2 green cardamom pods
-1 Cinnamon stick
-4 cloves
-1 cup finely chopped onions
-1/2 tsp Minced Garlic
-1/2 tsp Minced Ginger
-1/2 cup tomato puree
-3/4 tsp Chili Powder
-1/2 tsp salt
-3/4 tsp Garam Masala
-Handful chopped curry leaves (OPTIONAL)
-Handful chopped Coriander/Cilantro

DIRECTIONS

  1. Marinate chicken for minimum of 45mins to overnight in minced ginger, garlic, turmeric, chili powder, salt and Garam Masala.
  2. On medium heat, heat oil in a pan or pot (One that has a lid. You’ll need it.). Saute cloves, cinnamon, cardamom pods and bay leaf in hot oil for one minute, also the curry leaves if using them.
  3. Add onions. Saute until onions are soft (about 4-5 minutes).
  4. Add minced ginger and garlic, sautee untl the raw scent goes off (About 1-2 minutes).
  5. Add tomato puree, salt. chili powder and Garam Masala. Stir and saute until mixture thickens somewhat.
  6. Add marinated chicken and saute 5 minutes on medium heat.
  7. Reduce heat to low and cook COVERED for 5 minutes.
  8. Stir and add coriander and mix well.
  9. Cover and continue to cook on low heat until chicken is completely cooked to soft and tender. The chicken will cook in its own juices, so no need to add water.
  10. Eat!
