PORK VINDALOO

INGREDIENTS

1lb pork loin, cut into chunks
796ml canned chickpeas, with all of the juices
400ml diced tomatoes
1 large onion, chopped
2 tbps Chole Masala powder (or Garam Masala, etc. Find in your grocery)
1 tbps minced garlic
Handful of fresh coriander, chopped
1-2 tbsp olive oil
1/2 cup heavy cream
Salt & pepper, to taste

DIRECTIONS

  1. Heat a large pan on medium-high heat. Season the pork with desired amount of salt and pepper. Fry in pan for 5 minutes, mixing occasionally.
  2. Remove pork and set aside. Fry the onions in the pan with the remaining pork fat for about 2 minutes. Add garlic and fry for another 1 minutes.
  3. Add chickpeas and mix well. Cook for about 3 minutes. Add diced tomatoes and mix well. Add Chole Masala powder, mix well and cook for about 3 minutes.
  4. Add cooked pork to the mixture. Mix well. Cover and cook on medium heat for 12 minutes.
  5. Remove lid from the pan. Using a potato masher, mash up the chickpeas to thicken the sauce (other ingredients will obviously still be in their, too. Just mash!)
  6. Remove the pan from heat. Stir everything. Add coriander and cream. Mix more. Add about 1/2 a cup of water, if desired, to saucy up the sauce. Serve as is or with rice.
