PORK VINDALOO
INGREDIENTS
1lb pork loin, cut into chunks
796ml canned chickpeas, with all of the juices
400ml diced tomatoes
1 large onion, chopped
2 tbps Chole Masala powder (or Garam Masala, etc. Find in your grocery)
1 tbps minced garlic
Handful of fresh coriander, chopped
1-2 tbsp olive oil
1/2 cup heavy cream
Salt & pepper, to taste
DIRECTIONS
- Heat a large pan on medium-high heat. Season the pork with desired amount of salt and pepper. Fry in pan for 5 minutes, mixing occasionally.
- Remove pork and set aside. Fry the onions in the pan with the remaining pork fat for about 2 minutes. Add garlic and fry for another 1 minutes.
- Add chickpeas and mix well. Cook for about 3 minutes. Add diced tomatoes and mix well. Add Chole Masala powder, mix well and cook for about 3 minutes.
- Add cooked pork to the mixture. Mix well. Cover and cook on medium heat for 12 minutes.
- Remove lid from the pan. Using a potato masher, mash up the chickpeas to thicken the sauce (other ingredients will obviously still be in their, too. Just mash!)
- Remove the pan from heat. Stir everything. Add coriander and cream. Mix more. Add about 1/2 a cup of water, if desired, to saucy up the sauce. Serve as is or with rice.
