ROASTED TOMATO AND BASIL PASTA

INGREDIENTS
9 ROMA TOMATOES, HALVED LENGHTWISE
1 CUP FRESH BASIL, TIGHTLY PACKED
6 CLOVES OF GARLIC
OLIVE OIL
1/2 CUP PLAIN WALNUTS
SALT TO TASTE
PEPPER TO TASTE
GARLIC POWDER TO TASTE
450g DESIRED PASTA, COOKED

DIRECTIONS

  1. PREHEAT OVEN TO 400 DEGREES. PLACED HALVED TOMATOES ON A BAKING SHEET LINED WITH ALUMINUM PAPER. DRIZZLE WITH OLIVE OIL AND SPRINKLE ON DESIRED AMOUNT OF SALT, PEPPER AND GARLIC POWDER. BRUSH TOMATOES AND ROAST IN THE OVEN FOR 1 HOUR.
  2. WHEN THERE ARE 15-20 MINUTES LEFT IN THE TOMATO ROASTING PROCESS, TOAST ALMONDS IN A PAN ON MEDIUM HEAT.
  3. PUT HALF OF THE ROASTED TOMATOES INTO A FOOD PROCESSOR. ROUGHLY CHOP UP THE REMAINING TO0MATOES AND ADD TO COOKED PASTA AND STIR. ADD TOASTED ALMONDS, GARLIC CLOVES AND BASIL TO FOOD PROCESSOR WITH THE ROASTED TOMATOES. BLEND WELL UNTIL DESIRED CONSITENCY. IF NEEDED, ADD ABOUT 1 TBSP OF OLIVE OIL AND PULSE AGAIN.
  4. POUR TOMATO SAUCE OVER COOKED PASTA AND MIX WELL. PLATE AND TOP WITH OPTIONAL FRESH BASIL STRANDS AND THINLY CHOPPED ALMONDS.
