ROASTED TOMATOES

Extremely simple and versatile! You can use roasted tomatoes as a simple soup, as an added bit of awesomeness for a chili, pizza topping and more.

KITCHEN TOOLS NEEDED

9” x 13” baking sheet/pan
Aluminum foil

INGREDIENTS
THIS IS FOR A SMALL PORTION. YOU CAN, OF COURSE, USE MORE TO MAKE MORE!

3 Plum tomatoes (Or whatever kind of tomato you choose).
Olive oil for brushing
Salt & pepper to taste

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Cut “pits” off of each tomato (the ‘pit’ is the part where the stem was) and slice in half lengthwise.
  3. Cover baking pan with aluminum foil and place tomato slices on with cut sides facing up.
  4. Lightly coat each slice with olive oil. Easiest to use a little food brush.
  5. Sprinkle each slice with desired amount of salt and pepper. 6. Bake for 1 hour and remove. Done!
