SPICY GOAT CHEESE AND SPAM PENNE
KITCHEN TOOLS NEEDED
Medium sized pot
Large pot
Large mixing bowl
Electric hand mixer or food processor
Large skillet
INGREDIENTS
1 340g of Spam, sliced
25 cherry tomatoes, sliced
1 medium onion, diced
473ml heavy cream
130g Goat cheese, softened
1Tsp Red pepper flakes
4 cups Penne pasta, cooked and drained
Olive oil
DIRECTIONS
- BEGIN HEATING WATER IN THE LARGE PASTA POT TO A BOIL Heat 1Tsp of oil in medium sized pot and cook for 5 minutes on medium-high heat until soft.
- Add tomatoes and stir. Reduce heat to medium, cover and cook for 5 minutes, stirring about every minute.
- Start cooking Penne according to package instructions. Drain, return to pot, add 1tsp of oil and stir. Set aside. (YOUR SAUCE AND SPAM SLICES SHOULD BE ABOUT 2 MINUTES AWAY FROM BEING READY WHEN PASTA IS COOKED ANS SET ASIDE)
- Remove tomato and onion mixture from pot and put into a large mixing bowl. Blend together well with an electric hand mixer or food processor until desired thickness. Set aside.
- Put the cream into the pot you used for the tomato mixture (Clean it if you want. I didn’t because I’m awesome!). Break up goat cheese into about 6 pieces and add to the cream. Cook on medium heat until melted together.
- Add tomato and onion mixture & red pepper flakes to the cream sauce. Stir until combined and simmer on low heat, stirring occasionally. WHILE DOING THIS, GO TO STEP 7!
- Heat 1/2 Tbsp. of oil on medium heat in a skillet and cook Spam slices for about 2 minutes per side until they are an awesome golden brown. Remove from pan and cut into small cubes.
- Add Spam pieces to cheese sauce and stir. Pour sauce over cooked Penne. Stir and eat!
