THREE STAGE POTATOES

KITCHEN TOOLS NEEDED

Large mixing bowl
9” x 13” baking sheet
Aluminum foil
Potato masher
Non-stick cooking spray

INGREDIENTS

4 or more baking potatoes, skin on (two per serving, basically, so more if you are serving more)
4 medium onions, caramelized (OPTIONAL)
3 cloves of garlic, finely chopped
Salt and pepper to taste
Olive oil, for brushing potatoes
1-2 Tbsp butter (depending on how much you’re making)

DIRECTIONS

  1. Preheat oven to 425 F.
  2. Scrub potatoes and brush all over with olive oil, salt and pepper. Place on baking sheet lined with aluminum foil and sprayed with non-stick cooking spray. Bake for 1 hour.
  3. Take potatoes out of the oven, set the oven to BROIL, scoop out the flesh and put it into mixing bowl. Save two baked potato shells for filling and slice the other ones up.
  4. Add butter to the potato flesh, mash until desired mashiness. Add garlic and sliced potato skins and mix.
  5. Fill the two leftover baked potato shells with the mashed mix, brush with butter and broil for about 5-7 minutes. Remove from oven and top with caramelized onions (if using) and serve.

**You can swap out caramelized onions in favor of your favorite grated cheese, sour cream and more!
