CHOLE MASALA RICE BOWL

You don’t need Chole Masala spce mix to make one of these super awesome rice bowls! Use your own favorite spice mixture and it will still turn out excellent!
PUNJABI CHOLE MASALA
INGREDIENTS
-2 Tbsp oil.
-1 medium sized onion, chopped.
-1 Tbsp garlic, chopped/minced.
-1 Tbsp ginger, chopped/minced.
-1 1/2 cups pureed tomatoes.
-2 Tbsp Chole Masala powder
-796ml (28 Fl oz or about 2 cups) canned chickpeas. Keep chickpea juice aside.
-Fresh coriander, to taste.
DIRECTIONS
- Heat oil in a pot on medium heat. Cook onions for about 2 minutes.
- Add garlic, ginger and pureed tomatoes. Stir and cook about 3-4 minutes.
- Add Chole Masala powder and mix well.
- Add chickpeas and mix well. Add Chickpea juice (about 1 cup or more). Mix well.
- Cover and cook for 5-7 minutes. Add fresh coriander and mix well.
- Eat as is or make an artsy-fartsy rice bowl!
