CREAMY TOMATO AND AVOCADO PENNE
KITCHEN TOOLS NEEDED
Large mixing bowl
Medium pot
Large pot with lid
INGREDIENTS
6 cups penne pasta, cooked and drained
1 medium onion, chopped
5 cloves of garlic, chopped
40 grape/cherry tomatoes, sliced in half
½Tbsp ground cumin
3 ripe avocados
1Tsp red pepper flakes (optional)
473ml heavy cream
1Tbsp butter
1Tsp salt
½Tbsp olive oil
DIRECTIONS
- Heat olive oil in a medium pot on medium heat. Cook garlic for 3 minutes. Add onion and cook for another 3 minutes. Add tomatoes and cumin. Stir and cover the pot with a lid and cook for 5 minutes, stirring every minute.
- Put tomato mixture into large mixing bowl. BEGIN BOILING WATER FOR PASTA AND BEGINNING COOKING AS PER PACKAGE INSTRUCTIONS WHEN WATER IS BOILING. Put cream and butter into the pot you used for the tomato mixture and heat on low-medium heat until butter is melted. During this time, add avocado to the large mixing bowl with the tomato mixture and mash well until combined.
- Add tomato and avocado mixture to the cream. Stir until combined. Add red pepper flakes (if using) and salt. Stir and cook on low-medium heat for about 5 minutes.
- Pour tomato-avocado sauce into the pot with the cooked and drained Penne pasta, removed from heat. Stir until combined. Let stand about 5 minutes and serve!
