GOAT CHEESE AND AVOCADO MAC AND CHEESE
KITCHEN TOOLS NEEDED

INGREDIENTS
260 grams goat cheese (or more depending on how cheesy tasting you want t! I LOVE goat cheese and wish I used at least 50% more than I originally did).
10 ripe avocados, deseeded, skin removed
2 tbsp. butter
1 cup milk
2 Tbsp. chopped dill
1 Tsp. garlic powder
½ tsp. pepper
1 pint Grape/Cherry Tomatoes (about 20 of them) sliced in half.
900 grams pasta (any kind you prefer), cooked and drained.
DIRECTIONS
- In a large pot, boil water and cook pasta according to package instructions.
- While pasta is cooking, melt butter in a medium sized pot on Low-medium heat. Once melted, add milk. Stir and combine. About 2-3 minutes, then add garlic powder, pepper and chopped dill.
- While Milk and butter are doing their thing, deseed and remove avocado flesh from skin. Place in a mixing bowl and mash it all up.
- Add all of the goat cheese to the butter and milk mixture. Stir until melted.
- Add mashed avocado to milk and goat cheese mixture. Still on low-medium heat, stir and combine. Add mixture to the cooked and drained pasta. Mix it all up. Add tomatoes. Stir gently. Serve.
