GOAT CHEESE AND AVOCADO MAC AND CHEESE

KITCHEN TOOLS NEEDED

Large pot
Medium pot
Potato masher

INGREDIENTS

260 grams goat cheese (or more depending on how cheesy tasting you want t! I LOVE goat cheese and wish I used at least 50% more than I originally did).
10 ripe avocados, deseeded, skin removed
2 tbsp. butter
1 cup milk
2 Tbsp. chopped dill
1 Tsp. garlic powder
½ tsp. pepper
1 pint Grape/Cherry Tomatoes (about 20 of them) sliced in half.
900 grams pasta (any kind you prefer), cooked and drained.

DIRECTIONS

  1. In a large pot, boil water and cook pasta according to package instructions.
  2. While pasta is cooking, melt butter in a medium sized pot on Low-medium heat. Once melted, add milk. Stir and combine. About 2-3 minutes, then add garlic powder, pepper and chopped dill.
  3. While Milk and butter are doing their thing, deseed and remove avocado flesh from skin. Place in a mixing bowl and mash it all up.
  4. Add all of the goat cheese to the butter and milk mixture. Stir until melted.
  5. Add mashed avocado to milk and goat cheese mixture. Still on low-medium heat, stir and combine. Add mixture to the cooked and drained pasta. Mix it all up. Add tomatoes. Stir gently. Serve.
