INDIAN ONION SOUP

KITCHEN TOOLS NEEDED

Medium pot with lid
Cheese grater

INGREDIENTS

1/2 cup salted butter
10 medium sized onions, cut in half and sliced
900ml Beef Broth
1tbsp Cumin seeds
1Tsp ground Turmeric
3 Cloves
1/2Tbsp Ground Cardamom
1 Cinnamon stick, about 2 inches long
Fresh Coriander to taste
Grated Mozzarella, about 2Tbsp per serving depending on preference
Salt to taste

DIRECTIONS

  1. Melt butter in a medium sized pot on medium heat.
  2. Add onions. Mix until evenly coated. Cook on medium heat until onions are soft, stirring occasionally, about 25-20 minutes.
  3. Add cumin seeds, turmeric, cardamom, salt and cloves. Stir until evenly coated. Cover pot and continue to cook on medium heat for 5 minutes.
  4. Add cinnamon stick. Stir well. Add beef broth. Stir. Cover pot with lid, lower the heat just a little (Medium heat on my stove is #5. I lowered heat to #4). Let simmer for 30 minutes.
  5. Turn heat off, remove lid from pot and let cool for about 5 minutes. Taste and add salt if desired. Ladle soup into bowls and top with Mozzarella & coriander.
