LEMON AND CILANTRO AVOCADO PASTA SALAD
KITCHEN TOOLS NEEDED
Large pot
Large mixing bowl
Electric hand mixer or blender
INGREDIENTS
8oz of Rotini pasta
1 cup of cherry/grape tomatoes, sliced in half
1 small onion, chopped
2 tbsp. fresh cilantro, chopped
1 avocado, diced
1 tsp. of lemon juice
INGREDIENTS FOR DRESSING
1 ripe avocado
½ fresh lime, juiced
¼ cilantro, chopped
½ tsp. cumin
½ tsp. garlic powder
½ cup of buttermilk
Salt & pepper to taste
DIRECTIONS
- Blend all DRESSING ingredients in a large mixing bowl or blender/food processor until smooth.
- Cook pasta according to package instructions. Drain and run under cold water.
- Toss diced avocado and lime juice in large mixing bowl.
- Add remaining ingredients and toss with the dressing.
- Refrigerate for 1 hour before serving.
