INGREDIENTS
2 TBSP OLIVE OIL
2 ONIONS, THINLY SLICED
6 GARLIC CLOVES, FINELY CHOPPED
1 HEAPING TBSP CHILI POWDER
1 TSP GROUND CUMIN
1 CUP GREEN LENTILS
3 CUPS WATER
SOME FINELY CHOPPED TOMATOES
HANDFUL OF LETTUCE OR OTHER LEAFY
GRATED CHEESE
TORTILLA CHIPS
DIRECTIONS
- IN A LARGE PAN, HEAT OIL OVER MEDIUM-HIGH HEAT. TOSS IN ONIONS, GARLIC, CHILI POWDER AND CUMIN. COOK ABOUT 4-5 MINUTES UNTIL ONION & GARLIC SOFTEN AND THINGS ARE SMELLING REALLY FRIGGIN’ AWESOME.
- ADD LENTILS, WATER AND STIR. BRING TO A SLOW BOIL WHILE STIRRING OCCASIONALLY. COVER PAN WITH A LID. LOWER HEAT TO MEDIUM AND LET LENTILS COOK FOR 35 MINUTES. DO NOT STIR.
- ASSEMBLE YOUR BOWL WITH LEAFY GREENS AND TORTILLA CHIPS. ADD LENTIL TACO AWESOMENESS. TOP WITH TOMATOES AND CHEESE.
