INGREDIENTS

2 TBSP OLIVE OIL
2 ONIONS, THINLY SLICED
6 GARLIC CLOVES, FINELY CHOPPED
1 HEAPING TBSP CHILI POWDER
1 TSP GROUND CUMIN
1 CUP GREEN LENTILS
3 CUPS WATER
SOME FINELY CHOPPED TOMATOES
HANDFUL OF LETTUCE OR OTHER LEAFY
GRATED CHEESE
TORTILLA CHIPS

DIRECTIONS

  1. IN A LARGE PAN, HEAT OIL OVER MEDIUM-HIGH HEAT. TOSS IN ONIONS, GARLIC, CHILI POWDER AND CUMIN. COOK ABOUT 4-5 MINUTES UNTIL ONION & GARLIC SOFTEN AND THINGS ARE SMELLING REALLY FRIGGIN’ AWESOME.
  2. ADD LENTILS, WATER AND STIR. BRING TO A SLOW BOIL WHILE STIRRING OCCASIONALLY. COVER PAN WITH A LID. LOWER HEAT TO MEDIUM AND LET LENTILS COOK FOR 35 MINUTES. DO NOT STIR.
  3. ASSEMBLE YOUR BOWL WITH LEAFY GREENS AND TORTILLA CHIPS. ADD LENTIL TACO AWESOMENESS. TOP WITH TOMATOES AND CHEESE.
