MOROCCAN PASTA
KITCHEN TOOLS NEEDED
Large sauce pan
Large pot
Strainer
INGREDIENTS
6 cups of Penne pasta
1lb ground beef
2 tsp. cumin powder
2 tsp. paprika
½ tsp. ground cinnamon
¼ tsp. cayenne pepper
½ tsp. ginger powder
Salt and pepper to taste
3 cups of tomatoes, sliced (Or you can use premade pasta sauce)
2 cups fresh spinach, stems intact, rinsed and drained with cold water
¼ cup crumbled goat cheese
DIRECTIONS
1. Crumble beef and cook in a large saucepan set over medium heat. Add oil if needed.
2. Once the beef is cooked through, add cumin, paprika, ginger, cinnamon, cayenne, salt and pepper. Stir until evenly mixed.
3. Pour in tomatoes (or pasta sauce if using that) and simmer for about 15 minutes.
4. While the pasta sauce is simmering, cook the pasta according to the instructions on the package. When pasta is about 2 minutes from done, take 1-2 cups of the pasta water, place the spinach in a strainer and pour the pasta water over it to wilt it. Put wilted spinach aside. Drain pasta.
5. Make a layer of cooked pasta on individual plates or bowls. Add a layer of spinach and top with meat sauce and goat cheese.
