CHOCOLATE LECHE FLAN
INGREDIENTS
FOR THE CARAMEL
½ cup sugar
2 tbsp water
FOR THE FLAN
1 packet Chocolate Pudding Mix
355 ml of milk
2 unflavored gelatin packets
225 ml of table cream
2 eggs
DIRECTIONS
- Melt sugar with water over medium heat in a pan for about 4 minutes until it caramelizes. Pour caramel in a baking pan and set aside.
- Meanwhile, whisk 2 eggs until creamy and set aside.
- In a pan, NOT over heat, whisk milk and pudding mix, then add gelatin and whisk more. Add table cream and continue whisking.
- Place pan over medium heat and continue to whisk for 2 minutes until smooth, silky and loose. LOWER THE HEAT TO LOW. Slowly add 1 cup of the cream mixture into the beaten eggs while whisking. Add another cup of warm cream to the eggs as you whisk.
- Pour bowl of cream and beaten eggs to the left over warm cream in the pan. Continue to whisk over low heat for another 2 minutes.
- Pour batter into the caramel and chill between 4 to 6 hours in the refrigerator.
- Run a clean knife around the edges of the flan before inverting. Invert onto a plate and serve.
