NO-BAKE CHOCOLATE FLAN

CHOCOLATE LECHE FLAN

INGREDIENTS
FOR THE CARAMEL

½ cup sugar
2 tbsp water

FOR THE FLAN
1 packet Chocolate Pudding Mix
355 ml of milk
2 unflavored gelatin packets
225 ml of table cream
2 eggs

DIRECTIONS

  1. Melt sugar with water over medium heat in a pan for about 4 minutes until it caramelizes. Pour caramel in a baking pan and set aside.
  2. Meanwhile, whisk 2 eggs until creamy and set aside.
  3. In a pan, NOT over heat, whisk milk and pudding mix, then add gelatin and whisk more. Add table cream and continue whisking.
  4. Place pan over medium heat and continue to whisk for 2 minutes until smooth, silky and loose. LOWER THE HEAT TO LOW. Slowly add 1 cup of the cream mixture into the beaten eggs while whisking. Add another cup of warm cream to the eggs as you whisk.
  5. Pour bowl of cream and beaten eggs to the left over warm cream in the pan. Continue to whisk over low heat for another 2 minutes.
  6. Pour batter into the caramel and chill between 4 to 6 hours in the refrigerator.
  7. Run a clean knife around the edges of the flan before inverting. Invert onto a plate and serve.
