Spaghetti Aglio e Olio (aka Spaghetti with Garlic and Oil) is extremely simple yet extremely tasty! Give it a try!

SPAGHETTI AGLIO e OLIO

INGREDIENTS
Salt
Pepper
1/2 cup extra-virgin olive oil
1/2 pound dried spaghetti (or any pasta)
6 cloves garlic, very thinly sliced
1 pinch crushed red pepper flakes
2 tablespoons chopped fresh parsley
1/2 cup grated Parmesan
1/2 cup of pasta water
2 Tbsp lemon juice

DIRECTIONS

  1. Bring a large pot of well-salted water to a boil.
  2. Add oil and garlic to a cold pan and cook over medium heat.
  3. Start cooking the spaghetti in the boiling water.
  4. While it cooks, the oil should be just warm enough that the garlic sizzles gently. Add the crushed red pepper flakes.
  5. Keep cooking, shaking the pan to create an emulsion, until the oil mixture no longer has that harsh raw garlic flavor.
  6. When the pasta is al dente, after 8-10 minutes, drain it and add it to the pan, along with the chopped parsley, salt & pepper and lemon juice, tossing to coat. Add Parmesan and stir some more. Add some pasta water if it seems too thick. Eat!
