JAMAICAN HASH & MASH
INGREDIENTS
For the beef
½ medium onion chopped
1 teaspoon granulated garlic
1 teaspoon paprika
1/2 teaspoon all spice powder
1 teaspoon curry powder
1 teaspoon dried thyme
1 teaspoon white pepper
3 green onion chopped
2 tablespoon chopped parsley
1/2 teaspoon salt or more
1/2 teaspoon chili powder
1 pound ground beef
1/4 cup bread crumbs
1/2 scotch bonnet pepper, chopped (or 1/2 tsp Scotch bonnet pepper sauce) optional
1- teaspoon chicken bouillon powder, optional
For the mash
1 lb sweet potatoes, peeled and cubed
1 tbsp salted butter
Splash of heavy cream
Salt to taste
DIRECTIONS
- In a large pan on medium heat, add 2 tablespoon of oil to a saucepan, followed by onions, garlic, paprika, thyme, curry powder, chili powder, white pepper, all spice and chicken bouillon . Let it simmer for about 2 minutes. During this time, bring a large pot of water to a boil and cook the potatoes, covered, for 15 minutes.
- Add ground meat, bread crumbs to the pan and continue cooking for about 10 or more minutes, stirring frequently to prevent burning, add about ½ cup of water (I used red wine).
- Add green onions and parsley, adjust for salt and pepper seasoning.
- Drain the potatoes, add butter, cream and salt. Mash until desired consistency.
- Spoon a healthy amount of beef on to mash potatoes and eat.
